A half-day grazing walk through Fes el-Bali — bissara, sardine maakouda, fresh msemen, camel sausage, the city's famous pastries and mint tea, with a local food guide.
The best way to understand Fes is to eat where the Fassis eat. This grazing walk takes you to ten or so family stalls and hole-in-the-wall kitchens that tourists rarely find, with a local guide who knows every cook by name.
You'll start with a warming bowl of bissara (fava-bean soup) the way market workers eat it at dawn, try freshly griddled msemen and harcha, sample the sardine and potato maakouda, taste smoky merguez and the local khlii, and finish with the honey-soaked pastries Fes is known for and a glass of properly made mint tea. Come hungry — this replaces lunch.
